The following ingredients are needed to prepare Super Dosa.
Ingredients:-
Dosa Rice/ Raw Rice. - 3 cup
Idli Rice/ Boiled Rice. -1 cup
Whole white Urad dal. -1 cup
Methi seeds/ Fenugreek. -1/4 tsp
Poha /Flattened Rice. -1cup or Cooked Rice.-1cup
Salt. . -to taste
Oil /Ghee. -for roasting the dosa
Instructions:-
Wash and soak 1cup Urad dal along with 1/4tsp Methi seeds in water for 6 hours.
Wash and soak 3cup Dosa Rice and 1cup Idly Rice in water seperately for 6 hours.
First grind Urad dal and methi seeds together to a smooth thick batter. Transfer the batter to a big vessel.The vessel should be big enough as the batter will swell in volume when it ferments.
Then Grind Dosa Rice to a fine paste and transfer the batter to the big vessel.
Then grind Idly Rice little by little along with soaked Poha or cooked Rice adding very little water to a fine but little coarse batter.
Transfer both the ground batters in the big vessel and mix well.
Add 2tsp Salt and mix together all the batters in the big vessel with your hands for 2 minutes.
Keep the batter to ferment for 8 to 12 hours.
Method:-
Heat a dosa Tawa on medium flame and grease it with little oil or ghee.
Mix the fermented batter with a laddle and take a laddle full of batter.
Pour the batter on the dosa tawa and spread it to make thin round dosa.
Cover the dosa with a lid and cook for few minutes.
Remove the lid and pour little oil or ghee on the sides of the cooked dosa.
When the base of the dosa is roasted well, flip the dosa to roast the other side .
When both sides are roasted well transfer the dosa to a serving plate with a flat spatula.
Serve the dosa with tomato chutney or Sambar.
Left over batter can be stored in the refrigerator for further use.
TOMATO CHUTNEY RECIPE:-
Tomato Chutney is prepared without grinding the ingredients.The recipe is simple,quick and easy to make. This Tomato chutney is served with Idli, Dosa and also serve as a side dish with Rice .You can keep this Tomato chutney in a clean and dry container and store in a refrigerator and it will lasts for more than 3 months.
The following ingredients are needed to prepar Tomato Chutney.
Ingredients:-
Tomato. - 6 medium size
Black pepper. -8
Green chilly. -5
Curry leaves. -1spring
Ginger garlic paste. -1tbsp
Kashmiri Chilli powder. -1tbsp
Turmeric powder. -1/4 tsp
Amchur powder. -1 tsp
Coriander leaves. -1 bunch
Salt. -to taste
Oil. - 2tbsp
Instructions:-
Wash and finely chop Tomatoes and keep aside.
Peel wash and finely chop Onion and keep aside.
Wash and half slit Green chillies lengthwise and keep aside.
Clean,wash and finely chop Coriander leaves and keep aside.
Crush the pepper corns and keep aside.
Method:-
Heat 2tbsp Oil in a pan and add finely chopped Onion and saute well till the Onion pieces become translucent.
Add Curry leaves and crushed Black Pepper corns and fry for a second.
Add half slit Green chillies and saute well.
Add Ginger garlic paste and saute well till the raw smell goes off.
Add finely chopped Coriander leaves and mix well.
Add the finely chopped Tomatoes and saute well till the Tomato pieces become mushy.
Add Kashmiri Red chilly powder, Turmeric powder and Amchur powder one by one and stir and mix well.
Add required Salt and mix well till all the ingredients become mushy.
Cook well till it done and oil leaves from it's sides.Switch off the flame and allow the tomato chutney to cool.
Transfer the Tomato chutney from the pan to a clean and dry container.
Super tasty and delicious Tomato chutney is ready to serve with dosa, idli, chapathi and also as a side dish with rice.
You can keep this Tomato Chutney in a refrigerator and use it when ever needed.Lasts for a long time.
