Yam is called Surnu in Konkani. Surna Sassam is a Konkani dish.
The following ingredients are needed to prepare this delicious GSB Konkani style Surna Sassam.
Ingredients:-
Yam [Surnu]. - a small piece
Salt. - to taste
Butter milk. - 1cup or whisked Curd. -1 cup
Oil. -for deep frying
For grinding Coconut Red chilly Masala paste:-
Coconut grated. -1 cup
Dry Red chillies. - 4 or 5
Tamarind. - a chickpea size [optional ]
For Seasoning:-
Coconut oil -1tsp
Mustard seeds. -1tsp
Cumin seeds /Jeera. -1/2 tsp
Curry leaves. -1spring
Instructions:-
Chop and remove the outer skin of a small Yam / Surnu. Chop the Yam/ Surnu into small square pieces and wash well in water 2/3 times.Apply little Salt and keep aside for 15 minutes.Then squeeze the Yam pieces well and remove the water completely. Deep fry the Yam pieces in hot oil till crisp. Keep aside the deep fried Yam pieces.
Grind freshly grated Coconut along with dry Red chillies and a very small piece of Tamarind to a fine paste without adding water and keep aside the ground Coconut Red chilly Masala mixture.
Method:-
Transfer the ground Coconut Red chilly Masala mixture to a mixing bowl.
Add Butter milk into the ground coconut red chilly Masala mixture and mix well.
Add required Salt and stir well.Adjust the consistency. Do not boil the ground Masala mixture.
Add the deep fried Yam pieces into the ground coconut red chilly Masala mixture in the bowl.
Heat Coconut oil in a pan for seasoning and splutter Mustard seeds and Cumin seeds.Saute well.Add Curry leaves and fry for a second and switch off the flame.
Pour the above seasoning into the ground Coconut Red chilly Masala mixture in the bowl and mix well.
A very tasty and delicious GSB Konkani style Surna Sassam / Deep fried Yam in Curd Masala Curry is ready to serve as a side dish with Rice.
Note:-
You can add the deep fried Yam pieces into the ground Coconut Red chilly Masala mixture just before serving,
You can add 1cup whisked Curd into the ground Coconut Red chilly Masala mixture instead of adding Buttermilk.
Adding Tamarind in ground Coconut Red chilly Masala mixture is optional if the Buttermilk is sour.
