Raw Mango Coconut Masala is called Jeevo Ambya Sukke in Konkani.Raw Mango is chopped into big cubed pieces and cooked with ground Masala paste of roasted Coconut grating and other spices.This lip smacking Sukke is simple, quick and easy to prepare.
The following ingredients are needed to prepare this delicious recipe.
Ingredients:-
Raw Mango. -1 big
Salt. -to taste.
For grinding the Coconut Masala paste:-
Coconut grating. -1 cup
Urad dal. -2tsp
Chana dal. -4 tsp
Red chillies. -6
Methi seeds. -1/4 tsp
For Seasoning:-
Coconut oil/ Oil. -1 tbsp
Mustard seeds. -1 tsp
Curry leaves. -1 spring
Hing powder. -1/4tsp
Instructions:-
Peel the skin of one big Raw Mango and chop into big cubes and keep aside.
Heat little Oil in a pan and roast Chana dal and Urad dal till the colour of the dals starts to change.Add Red chillies and Methi seeds and roast well.Add Hing powder and 1cup grated Coconut and roast until the Coconut becomes light brown in colour.Let the roasted items to cool down.
Grind all the roasted ingredients to a coarse Masala paste adding very little water and keep aside.
Method:-
Heat1tbsp Oil in a pan and splutter Mustard seeds and saute well.
Add Curry leaves and fry for a second.
Add Hing powder and mix well.
Add the peeled and chopped Raw Mango cubed pieces into the pan.Cover and cook on low flame till the raw Mango pieces become soft.
Add Salt and mix well with the raw Mango pieces and saute well for 2 minutes.
Add the coarsely ground Coconut Masala paste and mix well with the cooked raw Mango pieces.
When the Coconut Masala paste coated well with the cooked raw Mango pieces switch off the flame.
A yummy, tasty and delicious Jeevo Ambya Sukke/ Raw Mango Coconut Masala is ready to serve as a side dsh with.Rice.
