Jackfruit seed is called Bikkand in Konkani Bikkand Upkari is a Konkani dish.This Jackfruit seed recipe is a no onion and no garlic spicy stir fry.A very tasty and delicious Kochi GSB style stirfry that can be served as a side dish with Rice, Chapathi, Phulka etc.
The following ingredients are needed to prepare this delicious Bikkand Upkari / Jackfruit Seed Stir fry recipe.
Ingredients:-
Jack fruit seeds. -10
Salt. -to taste
For Seasoning:-
Cooking oil/Coconut oil. - 1tbsp
Mustard seeds. -1tsp
Red chilly powder. -1tsp
Coconut oil. -1tsp
Instructions:-
1. Clean and peel the outer white skin of the Jack fruit seeds and soak the peeled Jack fruit seeds in Water for 2 hours.
2. Scrap or peel the outer brown skin of the soaked seeds with a kitchen knife and wash and clean them again in water.
3. Chop the peeled Jackfruit seeds each into two halves lengthwise.
4. Again chop the seeds into thin lengthy pieces and keep aside
Method:-
Heat 1tbsp Cooking oil preferably Coconut oil in a pan and splutter Mustard seeds and saute well.
Lower the flame and add Red Chilly powder and saute well for a second.
Add the chopped Jack fruit seed pieces and mix well.
Add required water to cook the Jack fruit seeds.
Add required Salt and mix well.
Cover the pan with a lid and cook the Jack fruit seeds till soft on low flame.
Stir in between and when the Water completely evaporates add 1tsp Coconut oil over the cooked Jack fruit seed pieces and mix well.
A very tasty Kochi GSB style Bikkand Upkari/ Jack fruit seeds stir fry is ready to serve as a side dish with hot steamed Rice.
