Drumstick leaves are called Masinga pathi in Konkani, Murungai Keerai in Tamail and Muringa Ela in Malayalam.Drumstick leaves also known as Moringa leaves have many nutritional benefits and are rich in Vitamins, Iron, Protein and Calcium.

Drumstick leaves Sambar is a very healthy dish made from split yellow Moong dal, Potato pieces and Drumstick leaves.Moong dal is rich in Protein and Vitamines.It is one of the best vegetarian super foods and easy to digest.Moong dal & Drumstick leaves makes the Sambar more tasty and healthy.
The following ingredients are needed to prepare this delicious Drumstick Leaves Sambar/ Masinga pathi Sambar.
Ingredients:-
Split Yellow Moong dal. -1 cup
Drumstick leaves.( fresh) -1 cup tightly packed
Potato. -1 medium size
Shallots. -8 or Onion-1 medium
Sambar powder. -5tsp
Tamarind. -a small lemon size.
Salt. -to taste
Oil. -1tbsp
Mustard. -1tsp
Cumin seeds/Jeera. -1/4tsp
Hing powder. -1tsp
Instructions:-
Clean and remove the stems and twigs from the Drumstick leaves.Soak and wash them in Water to remove the dust and small twigs.Drain Water and chop them roughly using your hands and keep aside.

Soak a small lemon size Tamarind in little hot water for 20 minutes and squeeze out the Tamarind pulp and keep aside.
Wash and rinse the split yellow Moong dal in water and keep aside.
Remove the skin,wash and chop the Potato into small pieces and keep aside.
Pressure cook the chopped Potato pieces along with split yellow Moong dal adding required Water for 4 whistles or till soft and well cooked. Keep aside.
Peel and roughly chop the Shallots / Onion and keep aside.Heat little oil in a pan and fry the Shallots/Onion till little translucent and keep aside.
Method:-
In a cooking vessel add the fried Shallots/Onion, roughly chopped Drumstick leaves, Sambar powder, Tamarind pulp, required Salt and 2 cup of Water.Mix well and allow it to boil and cook for 2 minutes till the leaves little cooked.
Add the pressure cooked Moong dal and Potato pieces.Mix well and boil for 1 minute and switch off the flame.
Heat Coconut oil/ any cooking oil in a pan and splutter Mustard seeds.
Add Cumin seeds and saute well.
Add Hing powder and mix well and switch off the flame.
Add this seasoning into the Drumstick leaves Sambar in the cooking vessel.
A tasty, yummy ,healthy and delicious Drumstick Leaves Sambar with Moong dal/ Masinga pathi Sambar/ Murungai keerai Sambar is ready to serve hot with steamed Rice/Dosa/Idli.
