WATER LEAF STIR FRY /SAMBAR CHEERA SUKKHAE -Konkani style stir fry.


Sambar Cheera is a leaf vegetable also known as Water Leaf. This spinach is known in different names.The common names are Water leaf, Ceylon Spinach, Florida spinach, Lagos bologi, Philippine spinach. In Kerala( India) this leaf vegetable is known as Sambar Cheera.Water Leaf/ Sambar Cheera is rich in Vitamin A and C and Minerals such as Iron and Calcium.Sambar Cheera/ Ceylon Spinach/ Water leaf is used for the treatment of Measles and diabetics.

This leaf vegetable is used in many recipes for cooking and also in Salads.Sambar Cheera Sukkhae is a very tasty and delicious Konkani style stir fry..You can use any type of cooking Oil to prepare this dish.But seasoning in Coconut oil makes the dish more tasty.

The following ingredients are needed to prepare this delicious Sambar Cheera Sukkhae recipe.

Ingredients:-

Sambar Cheera . -3bunch
Salt.                     -to taste.

For Coconut Masala mixture:-

Grated Coconut.   -1 cup or Desiccated Coconut.-1cup
Red chilly powder.-1tsp
Turmeric powder. -1/4 tsp

For Seasoning:-

Coconut oil/ Oil. -2tsp
Urad dal.              -1tsp
Mustard seeds.     -1tsp

Instructions:-

Clean and seperate the leaves from the stems and wash them in Water.

Finely chop the Sambar leaves and keep aside.

Mix the desiccated Coconut with Red chilly powder and Turmeric powder or coarsely grind the freshly grated Coconut with Red chilly powder and Turmeric powder. Keep aside the Coconut Masala mixture.

Method:-

Heat Coconut oil or any cooking Oil in a pan and add Urad dal and saute well.

When the Urad dal starts to change its colour splutter Mustard seeds and saute well.

Add finely chopped Sambar cheera and stir well.

Do not add a little drop of Water as the Sambar leaves has water content in itself.

Lower the flame and cover the pan with a lid and cook till the leaves cooked well..

When the chopped leaves wilt, add required Salt and mix well.

Sambar cheera has a little sour taste.So no need to add souring agents like Tamarind or Dharambe sol (Malabar Tamarind).

When the Water in the leaves evaporates, add the desiccated Coconut mixture or coarsely ground Coconut Masala mixture and stir well.

When the Water evaporates completely or the Coconut Masala mixture absorbs the Water from the leaves, switch off the flame.

A very tasty, yummy and delicious Konkani style Sambar Cheera Sukkhae/Water Leaf Stir Fry is ready to serve as a side dish with Rice.
