POTATO STIR FRY/ KUKKA UKKERI-Konkani style


Potato is called Kuk in Konkani.Kukka Ukkeri is a delicious and yummy Potato stir fry.
The following ingredients are needed to prepare this delicious Potato Stir fry.

Ingredients:-

Potato. -3 medium size
Onion. -1 big
Salt.     - to taste

For Seasoning:-

Coconut oil.            -1tbsp + 1tsp
Mustard seeds.        -1tsp
Urad dal.                 -1tsp
Curry leaves.           -1spring
Red Chilly powder. -1tsp
Turmeric.powder.    -1/4 tsp
Hing powder.           - 1/4 tsp

Instructions:-

Peel, wash and chop Potatoes into small cubes.Keep the potato cubes in a cooking vessel adding required water.Boil and cook the Potatoes till soft and keep aside.

Peel and finely chop Onion and keep aside.

Method:-

Heat 1tbsp Coconut oil in a pan and splutter Mustard seeds and saute well.

Add Urad dal, and Curry leaves, and saute well till Urad dal slightly chang its colour.

Add finely chopped Onion and rquired Salt  into the pan and saute well till the Onion pieces become translucent.

Lower the flame and add Red chilly powder and Turmeric powder and saute well.

Drain Water and add the boiled and cooked Potato pieces and saute well.

Add little Hing powder into the pan and mix well.

Cover the pan with a lid and cook the Potatoes on low flame for 2 minutes.Saute in between and switch off the flame.

Pour 1tsp Coconut oil over the Potato Stir fry.Mix well and transfer the Potato Stir Fry / Kukka Ukkeri to a serving plate.

A tasty Potato Stir Fry /Kukka Ukkeri is ready to serve as a side dish with rice, chapathi or phulka.
