RIPE BANANA STIR FRY /Ripe and firm Nendran Banana Stir fry.

Ripe Banana stir fry is a very tasty and healthy snack.Ripe and firm Nendran Banana/ Kerala Banana is used for preparing this delicious Ripe Banana Stir Fry recipe.Nendran Banana is a good source of Protein and Vitamins and is low in sodium.We can make varieties of dishes with ripe Nandran Banana .In Kerala, this Banana is called Nendran Pazham. People of Kerala traditionally use this Nendran Banana as a balanced and supplimentary diet.

Boiled and mashed ripe Nendran banana is excellent for Kids even from5 months on wards.This Ripe Banana stir fry is also good for adults and children.The recipe is very simple, quick and easy to prepare.



Ripe Nendran Banana

The following ingredients are needed to prepare this Ripe Banana Stir Fry.

Ingredients:-

Nendran Banana. -2 ripe and firm only
Coconut grating. -1/4 cup
Salt.                     -to taste

For Seasoning:-

Oil                    -1tbsp
Urad dal.          -1tsp
Mustard seeds. -1/2 tsp
Cumin seeds.    -1/4 tsp
Green chilly.     - 4
Curry leaves.    -1spring

Instructions:-

Take 2 ripe and firm Nendran Bananas/  Kerala Bananas and remove the skin.

Chop the Bananas lengthwise and then slice them into medium semi circle pieces and keep aside.

Wash and chop Green chillies into very small roundels and keep aside.

Freshly grate 1/4 cup Coconut and keep aside

Method:-

Heat 1tbsp Coconut oil in a pan and add Urad dal and saute well.

When Urad dal starts to change its colour splutter Mustard seeds and Cumin seeds (Jeera) and saute well.

Add chopped Green chilly roundels and Curry leaves.Saute well and fry the Green chilly roundels and Curry leaves for a second.

Add the chopped ripe Nandran Banana semi circle pieces and mix well.

Add required Salt  into the pan and mix with the ripe Banana pieces.

Sprinkle 2 tbsp Water and stir well.Cover the pan with a lid and cook the ripe Banana pieces till soft on low flame.

Add 1/4 cup Coconut grating into the pan and stir well.Mix the cooked ripe Banana pieces with the Coconut gratings  on low flame and then switch off the flame.

A tasty and yummy Ripe Banana Stir Fry is ready to serve as a tea time snack with a cup of hot Coffee or Tea.
