Pumpkin is called Duddi in GSB Konkani .Duddiya Sukke is a Kochi GSB Konkani style semi dry side dish of Pumpkin. This yummy and delicious side dish goes well with Rice/ Chapathi/ Phulkas.
The following ingredients are needed to prepare this delicious recipe
Ingredients:-
Pumpkin. - half of a medium small Pumpkin
Salt. -to taste
Hing powder.- 1/4tsp

Coconut grating. -1 cup
Red chilly. -4
Turmeric powder. -a pinch
For Seasoning:-
Coconut oil/ Oil-1 tsp
Urad dal. -1/2 tsp
Mustard seeds. -1/2 tsp
Dry Red chilly. -1
Curry leaves. - 1spring
Instrucions:-
Peel the outer hard skin of a small Pumpkin.Wash and chop into big square pieces and keep aside.
Grind the grated Coconut along with dry Red chillies and Turmeric powder to a coarse paste and keep aside.
Broke a dry Red chilly into halves and keep aside.
Method:-
Heat Coconut oil or any cooking oil in a pan and add Urad dal and saute well.
When the Urad dal starts to change its colour splutter Mustard seeds and saute well.
Add broken dry Red chillies and Curry leaves and fry well for a second.
Add chopped Pumpkin cubes and saute well.
Sprinkle little Water and saute well.
Add required Salt and mix well.
Cover the pan with a lid and cook in low flame till the Pumpkin cubes become soft but not mushy.Stir in between.
Add the coarsely ground Coconut mixture and mix well with the cooked Pumpkin pieces.Cook for a minute and stir in between. Then switch of the flame.
A tasty and deliciousPumpkin sukke/ Pumpkin Sukkhae/ Pumpkin Masala stir fry is ready to serve with Rice, Chapathi or Phulkas.
