Ghosale Humman (Ridge Gourd Humman) -konkani recipe.

 Ridge Gourd is called Ghosale in Konkani. Ghosale Humman is a very tasty and delicious curry made with tender Ridge gourd pieces and Potato pieces.The potato and Ridg gourd is a good combination and makes the cury more tasty.

 The following ingredients are needed to prepare Ghosale Humman.

Ingredients:-


Ridge gourd.         -2 tender and fresh
Coconut oil.           -2tsp
Mustardand.          -1tsp
Green chilly.           -3 half slit lengthwise
Red chilly powder. -1/4tsp (optional)
Water.                    -1 cup
Salt                        - to taste
Hing powder.         -a pinch






Instructions:-

1.  Wash and remove the skin of Potatoes and chop into thick cubed pieces.Keep aside.




2. Remove the outer skin ribes of the Ridge gourd and cut into thick round pieces and then chop into thick 1/2 inch cubed pieces and keep aside

.

3.  Wash and slit Green chillies and keep aside.







Method:-

Heat 2 tsp Coconut Oil in a kadai and splutter Mustard seeds and saute well.

Add slit Green chillies, saute well and fry in oil for a second.

Reduce the flame and add 1/4 tsp Red chilly powder.(optional) and stir well.

Add chopped Potato pieces and 1cup of Water and stir well.

Cover the Kadai with a lid and cook the Potato pieces till soft.

Add required Salt and mix well.

Add the chopped Ridge gourd pieces and mix well.

Add Hing powder and mix well.

Cover the Kadai with the lid and cook the Ridge gourd pieces till soft and switch off the flame.



A tasty Ghosale Humman( Ridge gourd stir) is ready to serve with Rice.
