Kuvale Upkari(Tender Ash gourd Stir Fry)- konkani recipe.

Ash gourd is called Kuvale in Konkani. Upkari means stir fry in Konkani.Tender Ash gourd is used to prepare this stir fry.

The following ingredients are needed to prepare this delicious  Kuvae Upkari / Tender Ash gourd Stir fry.

Ingredients:-

Tender Ash gourd. - a small piece.
Green chillies.        -2
Mustard seeds.      -1tsp
Cooking oil.            -1tsp
Salt.                        - to taste


Instructions:-

1. Thinly peel the outer skin of a tender Ash gourd and cut it into medium round thick pieces and keep aside.


2. Wash and chop the tender Ash gourd into medium square pieces and keep aside.



3. Wash and half slit Green chillies lengthwise and keep aside.


Method:-

Heat oil in a pan and splutter Mustard seeds and saute well.

Add half slit Green chillies and saute well and fry in oil for a second.

Add the chopped tender Ash gourd pieces and saute well.

Add required Salt and sprinkle Hing powder and mix well.

Cover and cook on low flame till the Ash gourd pieces become soft and firm.

Switch off the flame.

A tasty Kuvale Upkari /Tender Ash gourd Curry is ready to serve as a side dish with Rice.
