The following ingredients are needed to prepare Ash gourd Pachadi[Kuvale Pachadi.]
Ingredients:-
Ash gourd( Kuvale). - a small piece
Green chilly. -2
Salt. - to taste.
Curd. -1cup
For grinding the Coconut paste:-
Coconut grating. -1cup fresh
Green chillies. -2
Cumin seeds/Jeera. -1 tsp
For Seasoning:-
Cooking oil. -1tsp
Mustard seeds. -1 tsp
Dry Red chillies. -2
Curry leaves. -1spring.
Instructions:-
1. Remove the outer skin of a small Ash gourd piece.Discard the seeds and chop into small lengthy thin pieces,wash and keep aside.
2. Wash and half slit 2 Green chillies and keep aside.
3. Grind freshly grated Coconut, 3 Green chillies and Cumin seeds/Jeera to a smooth paste adding little Water and keep aside.
Method:-
1. In a cooking vessel add the chopped Ash gourd thin pieces, half slit 2Green chillies and 2 cup of Water.Boil and cook the Ash gourd pieces till soft.
2. Add required Salt and mix and boil well for 2 minutes.
3. Add the ground Coconut paste and mix well with the cooked Ash gourd pieces and boil for a minute.When the bubble begins to come switch off the flame.
4. When little cooled add Curd and mix well.
5. Heat oil in a pan for seasoning and splutter Mustard seeds and saute well.
6. Add dry Red chillies broken into halves and fry in oil.
7. Add Curry leaves and fry for a second and switch off the flame.
8. Pour this seasoning into the Pachadi in the cooking vessel.
A tasty and yummy Kuvale Pachadi (Ash gourd Pachadi) is ready to serve with Rice.
