Landhe Gudhga Upkari /Breadfruit Masala Fry

Landhe Gudhga Upkari is a spicy and delicious masala fry made with Breadfruit and other spices.This  tasty and spicy Breadfruit  masala fry goes well as a side dish with Rice.Carom seeds/Ajwain [ova in konkani] is used in this recipe.Ajwain seeds/Carom seeds are rich in fiber,vitamines, minerals and are very good to maintain digestive system. Some people have gas problem,stomach pain etc., while eating Breadfruit dishes.Carom seeds are a good treat to stomach pain and gas problems.

The following ingredients are needed to prepare Breadfruit Masala Fry.

Ingredients:-

Beadfruit ( Landhe Gudhgo).-1/2 of a medium one.
Carom seeds (Ajwain).          -1 tsp

For Masala mixing:-

Red chilly powder. -1tsp
Turmeric powder.   -1/4 tsp
Coriander powder.  -2 tsp
Pepper powder.       -1/2 tsp
Hing powder.          -1/2 tsp
Salt.                         -to taste

For Seasoning:-

Cooking oil.     -2tsp
Mustard seeds. -1tsp
Curry leaves.    -1spring

Instruction:-

Wash a firm and matured Breadfruit and cut into halves lengthwise.Scrap and remove the outer skin and chop the middle core portion.Chop of the matured Breadfruit piece into small slices Wash and keep aside.

Transfer the Breadfruit slices in a wide mixing bowl.Add Red chilly powder, Turmeric powder, Coriander powder, Pepper powder, Hing powder and required Salt.Mix all the spice powders well until the Breadfruit slices nicely coated with the spice powders.Keep aside.

Method:-

Heat oil in a pan and spluttter Mustard seeds and Ajwain seeds and saute well.

Add the Breadfruit slices coated with spice powders and stir well.

Sprinkle little Water and mix well.

Cover the pan with a lid and cook the Breadfruit slices on low flame until soft and well cooked.

 Breadfruit slices cooked very fast.Sprinkle little Water and stir in between till cooked and switch off the flame.

A tasty Landhe Gudhga Upkari/ Breadfruit Masala Fry is ready to serve as a side dish with Rice.
