Landhe Gudhgya Baluk [Breadfruit Chips]- konkani snack

 
Breadfruit is called Landhe Gudhgo and Chips are called Baluk in Konkani. Breadfruit chips are very popular in Kochi GSB cuisine.The taste is similar to fried Cashew nuts.To make Breadfruit chips, firm and mature Breadfruits are used. Any cooking oil can be used for deep frying. But frying in Coconut oil makes the chips more tasty. Breadfruit Chips recipe is given with step by step pictures.

The following ingredients are needed to prepare the Breadfruit Chips / Landhe Gudhgya Baluk.

Ingredients:

Breadfruit (Landhe Gudhgo). -1 firm, large and mature.
Salt.-1tsp and Water.-1/4 cup - to make salt water                           
Coconut oil or Cooking oil.   - for deep frying


Instructions:

1). Take a firm and mature breadfruit.

 
 
2).  Wash and chop the breadfruit vertically into two halves.
 
 
 Method:
 
1). Take one part of the breadfruit.
 
2). Peel and remove the outer skin of the chopped breadfruit. Remove the core (centre) portion and slice the breadfruit into very thin pieces and soak them in water for few minutes. Drain water and keep the chopped breadfruit slices on a plate.
 
3). In a small bowl add 1tsp salt and 1/4 cup of  water and mix well to make salt water and keep aside.
 
4). Heat oil in a kadai on medium flame for deep frying.
When the oil is hot, add the chopped thin breadfruit slices in hot oil (a few at a time) and deep fry them in hot oil until golden colour.

5). When the breadfruit slices starts to become golden brown colour on the edges add very little (about less than 1/4 tsp) salt water from the bowl into hot oil using a spoon. Stir the breadfruit slices using a slotted spoon and fry them on medium flame


6). Then flip the breadfruit slices in hot oil with slotted spoon to cook the other side and to make it more crispy. Deep fry the breadfruit slices till golden colour and crisp on both sides.When done remove the deep fried crispy breadfruit slices from hot oil and transfer to a paper towel to drain excess oil.


Store the deep fried crispy breadfruit chips in an air tight container. Crispy and more tasty breadfruit chips are ready to serve as a tea time snack.
