Pachuve Bajji Upkari (Konkani recipe)/ Green Amaranth Stir Fry.


Green Amaranth is called Pachuve Bajji in Konkani. Pachuve Bajji Upkari is a healthy and tasty stir fry of Green Amaranth leaves and stems.This Konkani style stir fry recipe is simple, quick and easy to make with very few ingredients.You can add 3 small chopped Garlic in the seasoning(optional).I have not added Garlic in this recipe.

The following ingredients are needed to prepare this delicious recipe.

Ingredients:-
Green Amaranth. -1 big bunch
Green chilly.         -5
Mustard seeds.    -1tsp
Cooking oil.         -1 tsp
Salt.                     -to taste

Instructions:-


Take a big bunch of Green Amaranth/ Puchuve Bajji.



Chop and remove the roots and seperate the leaves and top leaf part from the stem.


Clean the leaves and stems and wash thoroughly two three times in water and f
inely chop the leaves and stems and keep aside.

Wash and half slit Green Chillies lengthwise and keep aside.


Method:-

1.  Heat oil in a Kadai and splutter Mustard seeds..Add the half slit Green chillies and saute well and fry well in oil for a second.

2.  Add the finely chopped stems and saute well.Cover the kadai with a lid and cook the stems till soft.
Donot add water as the Amaranth leaves and stems have water content in it.

3.  Add the finely chopped leaves and mix well with the cooked stems. Saute well 


4.  Add required Salt and mix well.

5.  Cover and cook till the leaves shrink and cooked well and the water from the leaves and stems evaporates.Saute in between.

A tasty, healthy and delicious Green Amaranth leaves stir fry/ Pachuve bajje Upkari is ready to serve as a side dish with Rice.
