Tambidi Bajji Upkari (Red Amaranth Stir Fry) Konkani recipe.



Red Amaranth is called Tambude Bajji in Konkani.Tambidi Bajji Upkari is a healthy and tasty stir fry of Red Amaranth leaves and stems.This Konkani style recipe is very simple,quick and easy to make with very little ingredients.You can add 2 Red chillies broken into halves instead of half slit Green chillies in this recipe.

The following ingredients are needed to prepare this healthy recipe.

Ingredients:-

Red Amaranth leaves. -1 big bunch with stems.
Green chillies.             - 4  or  Dry Red chillies. -2 broken into halves
Mustard seeds.            -1tsp
Salt.                             -to taste
Cooking oil.                -1tsp

Instructions:-

Remove the root part of Red Amaranth.Clean and check the leaves.Wash the leaves along with stems thoroughly in water two three times and keep them in a colander..

Finely or roughly chop the Red Amaranth leaves along with stems and keep aside.

Wash and  half slit Green chillies lengthwise and keep aside.

Method:-

Heat 1tsp Cooking oil (Coconut oil) in a kadai and splutter Mustard seeds and saute well.

Add half slit Green chillies into the kadai and saute well and fry in oil for a second.

Add the chopped Red Amaranth leaves and stems and saute well.

Do not add any drop of water .The Amaranthe leaves has water content  in it and the water will come from the leaves itself.

Cover the kadai with a lid and cook the leaves and stems on low flame and saute in between.

When the leaves shrinks, add required Salt into the kadai and mix well.

Cook till the water from the leaves and stems evaporated and  cooked well.Saute in between and switch off the flame .

Konkani style healthy and tasty Tambidi Bajji Upkari / Red Amaranth Stir Fry is ready to serve as a side dish with rice.
