Ash gourd Tomato Pachadi is a very tasty and delicious Curd based Curry and goes well with Rice.The following ingredients are needed to prepare Ash gourd Tomato Pachadi.
Ingredients:-
Ash gourd. - a small piece
Green chillies. -2
Salt. - to taste
For grinding the Coconut Masala Paste:-
Coconut grating. -1 cup
Green chillies. -2
Cumin seeds. -1/4 tsp
Shallots. - 4
Garlic clove. -1small
Curd. -1cup
For Seasoning:-
Oil. -2 tsp
Mustard seeds. -1tsp
Onion. -1big
Tomatoes. -2 medium
Curry leaves. -1spring
Instructions:-
Peel the skin and remove the seeds of a small Ash gourd piece .Wash and chop into small cubes and keep aside.
Wash and finely chop Onion and keep aside.
Wash and half slit Green chillies and keep aside.
Wash and chop Tomatoes into small pieces and keep aside.
peel the skin of Shallots and a small clove of garlic and keep aside.
Grind the Coconut grating along with 2 Green chillies, Cumin seeds, Shallots, a small Garlic clove and a cup of curd to a smooth paste and keep aside.
Method:-
In a cooking vessel add the chopped Ash gourd cubes, half slit 2 Green chillies, required Salt and 2 cup of Water.Boil well and cook the Ash gourd pieces till soft .
Add the ground Coconut Masala paste into the cooking vessel and stir well and mix with the cooked Ash gourd pieces.
Check Salt and add little Salt if needed.Give a boil.When the Bibbles starts to appear on the sides, switch off the flame.Do not boil too much.,the Curry will curdle.
Heat oil in a pan for seasoning.Splutter Mustard seeds and Cumin seeds and saute well.
Add Curry leaves and saute well and fry in oil for a second.
Add finely chopped Onion and saute well till the Onion pieces turns translucent and change its colour.
Add chopped Tomatoes and saute well till the Tomato pieces become mushy.
Mix well and switch off the flame.
Add the above seasoning into the Ash gourd Tomato Pachadi and mix well.
