Kappe Upkari / Tapioca Stir Fry

Tapioca Stir fry is called Kappe Upkari in Kochi Konkani.The following ingredients are needed for preparing tasty Kappe Upkari / Tapioca Stir fry.

Ingredients:-

Tapioca.                - 1/2 Kg.
Turmeric powder. - a pinch.
Coconut oil.          - 2tbsp
Urad dal.               -1tsp
Mustard seeds.      -1tsp
Dry Red chilly.      -1 
Curry leaves.          -1spring
Onion.                    -1 big
Ginger.                   -a small piece.
Green chillies.        - 4
Coconut grating.     -1cup
Salt.                         - to taste

Instructions:-

Peel the outer skin of the Tapioca and wash well in water.Chop theTapioca into medium thick square pieces.

In a vessel add the chopped Tapioca cubes, a pinch of Turmeric powder, little Salt and require water just to immerse the Tapioca pieces in Water.Boil and cook Tapioca pieces till soft and keep aside.

Wash and half slit Green Chillie lengthwise and keep aside.

Broke the dry Red chilly into halves and keep aside.

Peel,wash and finely chop a small Ginger piece and keep aside.

Peel, wash and finely chop Onion and keep aside.


Method:-

Heat Coconut oil in a pan on medium flame.

Add Urad dal and saute well. Splutter Mustard seeds and saute well.

Add broken dry Red chilly bits and fry well.

Add Curry leaves and fry for a second.

Add finely chopped Onion pieces and saute well till translucent.

Add chopped Ginger pieces and saute well.

Add half slit Green chillies and stir well.

Add the Coconut grating and mix well.

Add the boiled and cooked Tapioca pieces and stir again.

Mix everything well and switch off the flame.

A very tasty Kappe Upkari/ Tapioca Stir Fry is ready to serve with hot tea or hot Coffee.
