Kananga Upkari is a Konkani style Sweet Potato Stir fry.Sweet Potato is also known as Chinni Kanang in Kochi Konkani.

The following ingredients are needed to prepare Konkani style Sweet Potato Stir fry.
Ingredients:-
Sweet Potato. - 3 medium size
Dry Red chillies. - 4
Curry leaves. -1spring
Hing powder. -1/4 tsp
Urad dal. -1tsp
Mustard seeds. -1tsp
Coconut grating. -1/2 cup
Oil. -2tsp
Water. -1cup
Salt. -to taste
Instructions:-
Remove the outer skin with a scraper and wash the Sweet Potatoes.Chop them into medium square pieces and keep aside.
Grate fresh Coconut about 1/2 cup and keep aside the other ingredients ready for seasoning.
Method:-
Heat Oil in a pan on medium flame and add Urad dal and saute well.
When Urad dal starts to change its colour splutter Mustard seeds and saute well.
Add dry Red chillies and fry in oil for a second.
Add Curry leaves and saute well.
Add Hing powder and mix well.
Add the chopped Sweet Potato pieces and saute well.
Add 1cup Water and mix well.
Add required Salt and mix well.
Cover the pan with a lid and cook the Sweet Potato pieces untill soft and stir in between.
Add Coconut grating and stir and mix well.
When the Water completely absorbs and the Coconut grating nicely coated with the cooked Sweet Potato pieces, mix well and switch off the flame.
A tasty and delicious Sweet Potato Stir fry is ready to serve as a side dish with Rice or can be served with a cup of hot tea or Coffee as a evening snack.
