MASALA DOSA RECIPE / Home made Masala Dosa and Masala Fillings with Shallots Chutney

Masala Dosa is a south Indian Dosa dish filled with spicy vegetable masala and shallots chutney.The following ingredients are needed for preparing a tasty Masala Dosa.Very simple and easy to prepare at home and can serve as a breakfast or dinner or with a hot Tea or Coffee.

Ingredients:-

White whole Urad dal.    - 1cup
Fenugreek/ Methi seeds. -1tsp
Raw Rice.                        -3 cup
Salt.                                 -to taste

For Masala Filling:-

Potato.                 - 4 medium size
Carrot.                 -2 medium size
Green peas.          -1/4 cup ( frozen)
Onion.                  -2 medium size
Green chillies.      - 5
Ginger.                  - a small piece.
Cinnamon.             -2 small stick
Cloves                    -5
Cardamom.            -2 pods
Fennel seeds.         - 1tsp
Coriander powder. -1tsp
Red chilly powder. -1tsp
Turmeric powder.   -1/4 tsp
Salt.                         - to taste

For Shallots Chutney:-

Shallots.                 -10 or 12
Red chilly powder. - 2tsp [Kashmiri Red chilly powder]
Tamarind.               - a small piece
Salt.                        - to taste

Coconut oil.            -1/2tsp

Instructions:-

1. For Dosa batter.

Wash and soak Urad dal and Methi seeds in water together for 6 hours.Wash and soak Raw Rice in Water for 6 hours.

Drain the water and grind the soaked Urad dal and Methi seeds together to a smooth and thick batter adding very little water.Transfer the ground batter in a large vessel.

Drain the Water and grind the soaked Raw Rice to a smooth batter adding little Water.Transfer the ground batter into the same large vessel.

Add Salt and mix together both the batter in the large vessel. Keep the vessel in a warm place to ferment the batter.It will take about  8 to12 hours to ferment the batter.Keep aside the fermented dosa batter. 

2. For  Masala Filling:-

Wash and boil the Potatoes till soft.Peel the skin and roughly mash the cooked Potatoes and keep aside.

Peel,wash and finely chop Onion and Ginger and keep aside.

Wash and chop Green chillies into small pieces and keep aside.

Grind the Cinnamon, Cloves, Fennel seeds and Cardamom to a fine powder and mix with Coriander powder, Red chilly powder and Turmeric powder.Mix all the spice powders together and keep aside the ground Spicy Masala powder.

Method:-

1.To  Prepare Shallots Chutney.

Peel and wash the shallots and roast them in a pan adding little oil.Grind the roasted Shallots along with Tamarind, Kashmiri Red chilly powder and little Salt to a smooth paste without adding water.Transfer the ground chutney in a bowl.Add 1/2tsp Coconut oil over the Shallots chutney and mix well. Keep aside.

2. To Prepare Masala Filling.

Heat Oil in a pan and add Urad dal and saute well.When Urad dal starts to change its colour splutter Mustard seeds and saute well.

Add finelychopped Onion, Ginger, Green chillies and Curry leaves and saute well till Onion becomes translucent.

Add the ground Spicy masala powders and mix well.

Add the roughly mashed Potatoes, chopped Carrots, Green peas and mix well.

Add Salt and sprinkle little Water and mix well.Cover the pan with a lid and cook until all the vegetables cooked well.Switch off the flame.Transfer the Masala filling in a bowl and keep aside.

3.  To Prepare Masala Dosa.

Heat a dosa tawa on medium heat and sprinkle little water on it and wipe with a kitchen towel.Spread little oil on the tawa with a oil brush.

Take a ladle full of dosa batter and spread the batter on the tawa and make very thin dosa.Lower the flame and cook the bottom portion of the dosa little crisp.

Take a spoon of Shallots chutney and spread it over the cooked thin dosa.

Take a big spoon full of Masala filling and place it on the center of the cooked thin Dosa above the spreaded Shallot chutney and fold the thin dosa on one side and again fold it to the same side.

Remove the masala filled crispy dosa from tawa with a flat spatula and transfer to a serving plate.

A very tasty and crispy Masala dosa is ready to serve hot with hot Sambar or Chutney or as it is.
