Potato Thoy (Konkani Recipe)

Potato Thoy is a Konkani style side dish and my husband's favourite dish.The following ingredients are needed to prepare Potato Thoy.

Ingredients:-

Potato.             -3 medium size.
Green chilly.     -2
Curry leaves.    -1spring
Hing powder.    -1tsp
Mustard seeds. -1tsp
Salt.                  -to taste
Coconut oil.      -1tsp

Instructions:-

Wash the Potatoes thoroughly in Water 2 to 3 times.Pressure cook the Potatoes with skin for 3 whistles adding required water to fully immerse the Potatoes.Keep aside to cool.

Wash and chop the Green Chillies into thin roundels and keep aside.



Method:-

Peel and remove the skin of boiled Potatoes.Mash the Potatoes thoroughly with a masher or with your hands .

Heat Coconut oil in a pan on medium flame and splutter Mustard seeds and saute well.

Add thinly chopped Green chilly roundels and Curry leaves and saute well in oil for a second.

Add the mashed Potatoes and mix well.

Add 2 cup of Water and mix with mashed Potatoes.

Add Salt and mix well.Boil and cook for 5 minutes on low flame.

Add Hing powder and mix well.Boil again for a minute and switch off the flame.

A tasty Potato Thoy is ready to serve as a side dish with Rice, Chapathi, Naan etc.
