Soft and Thick Set Dosa

Set dosa is a set of  small,soft and spongy thick dosas usually served with 3 or 4 dosas with chutney, pickle and sambar as side dishes.Set dosa is a very popular breakfast in south India.

The following ingredients are needed for preparing Soft and Thick Set Dosa.

Ingredients:-

Whole white Urad dal.        -1cup
Methi seeds.                        -1tsp
Idli Rice.                             - 4cup 
Thick Poha.                        - 1cup

Salt.                                    -to taste
Oil.                                     - for spreading

Instructions:-

Wash and soak  whole white Urad dal and Methi seeds together in water for 5 hours.

Wash and soak Idli Rice, and Poha seperately in Water for 5 hours.

Drain the water and grind the soaked Urad dal and Methi seeds together to a thick and fine batter.Transfer the ground Urad Methi batter to a large vessel.[You can add little cool water if needed while grinding.]

Drain the water and grind the soaked Idli Rice little by little along with soaked Poha to a smooth batter.Add very little water if needed.Transfer the ground Poha Idli Rice batter to the same large vessel.

Add required Salt and mix well all the batters in the large vessel together using your hands for 2 minutes.Keep aside the batter to ferment for 8 to 12 hours.

Method:-

Heat a dosa tawa on medium flame and spread little oil on the hot tawa.

Mix the fermented batter well.Take a ladle full of dosa batter and pour the batter on the dosa tawa and spread the batter a little.Do not spread the dosa too much.Make thick small soft dosa and cook well.

When the base is cooked add little oil on  the sides of the dosa.

No need to cook the other side.If you want to cook the other side just flip it and turn the dosa and cook the other side for 1 minute and remove from tawa with a flat spatula.

Make small, thick and soft dosas with the remaining batter.Transfer the thick small soft 3 set of dosas to a serving plate.Set Dosa is ready to serve with any hot pickle or chutney.

Left over Dosa batter can be stored in the refrigerator for further use.
