DRUMSTICK POTATO BRINJAL SAMBAR

Sambar is a popular south Indian dish and is served with Rice, Idli, Dosa etc.The following ingredients are needed to prepare Drumstick Potato Brinjal Sambar.

Ingredients:-

Toor dal.             -1cup
Drumstick.         -1
Brinjal.               -2
Potato.                -2 medium size
Carrot.                -1
Tomato.              -2 medium size
Tamarind.           -a small piece
Sambar powder. -5 tsp
Hing powder.     - 3/4 tsp
Salt.                    -to taste.



For Seasoning :-

Coconut oil/ Oil. -1tsp
Mustard seeds.    -1tsp
Cumin seeds.      -1/2 tsp
Curry leaves.      -1spring



For Sambar powder:-

Urad dal.             -1tbsp
Coriander seeds. - 4tbsp
Dry Red chillies. -10
Fenugreek seeds. -1/4 tsp
Turmeric powder. - a pinch


Instructions:-

Peel and chop Potato into medium lengthy pieces.Wash well and keep aside.

Peel wash and chop Carrot into small roundels and keep aside.

Wash and pressure cook Toor dal, chopped Potato and chopped Carrot adding 2 cup of water for 2 whistle and keep aside.

Peel the outer skin and chop Drumstick into 1 inch lengthy pieces and keep aside.

Wash and chop Brinjal into medium thick pieces and keep aside.

Wash and chop Tomatoes and keep aside.


To prepare Sambar Powder :-

Heat a pan on low flame and dry roast Urad dal, Coriander seeds, dry Red chillies and Methi seeds till Urad dal change its colour and a nice aroma comes out. Switch off the flame and allow the roasted ingredients to cool.When little cooled, mix a pinch of Turmeric powder and grind the roasted ingredients to a fine powder.Transfer the ground Sambar powder into a dry and air tight container and keep aside.

In a small bowl add 5 tbsp prepared Sambar powder and 1tsp Hing powder and mix well with little water and make a paste and keep aside.

Soak a small piece of Tamarind in 2tbsp of hot Water for 10 minutes and then squeeze and make Tamarind water and keep aside.



Method:-

In a cooking vessel add the chopped Drumstick pieces and Brinjal pieces. Add 2 cup of water and boil well and cook till soft.

Add the cooked Potato pieces and Carrot pieces and mix well with the cooked Drumstick and Brinjal pieces.

Add cooked Toor dal and mix well.

Add Salt, chopped Tomato and little Tamarind water and mix well. Boil and cook on low flame for 2 minutes.

Add the Sambar powder+ Hing powder paste from the bowl and mix well.Boil for 2 minutes and switch off the flame.

Heat oil in a pan and splutter Mustard seeds and Cumin seeds and saute well.

Add Curry leaves and fry well. Switch off the flame.

Pour the above seasoning into the Sambar in the cooking vessel.

A tasty and delicious Drumstick Potato Brinjal Sambar is ready to serve with Rice, Idli, Dosa etc.
