Jackfruit Halwa is a sweet and tasty dish made with ripe Jackfruit bulbs and grated Jaggery.The following ingredients are needed to prepare Jackfruit Halwa.
Ingredients:-
Ripe Jackfruit bulb. -15
Jaggery grated. - 2 cup
Ghee. - 3 tbsp
Cardamom pods - 5
Cashewnuts. - few for garnishing (optional)
Instructions:-
Clean the ripe Jackfruit bulbs, remove the seeds and chop into small pieces and grind to a smooth paste without adding Water.(If the Jackfruit bulb is too soft then no need of grinding) Keep aside.
Grate the Jaggery using a kitchen knife and keep aside.
Peel the Cardamom pods and crush to make Cardamom powder and keep aside.
Grease a steel plate with Ghee and keep aside.
Method:--
In a steel Kadai add the Jackfruit bulb paste (or chopped very soft ripe Jackruit bulbs) and cook on medium flame without adding water and stir continuously till water absorbs.
Add grated Jaggery, stir well and cook on medium flame.
Add 1tbsp Ghee and continue stirring till the grated Jaggery melts and mix with the cooked Jackfruit bulb paste.
When water dries up add 1tbsp Ghee and stir continuously till the mixture becomes thick.
Check the Halwa consistency.Take a small portion of the mixture on a plate and when you touch, it will not stick to your finger.
Add crushed Cardamom powder and stir well till the mixture leaves the Kadai without sticking.
Add 1tbsp Ghee and continue stirring till the mixture become a thick solid.
Remove the kadai from heat and transfer the Halwa into the greased steel plate.Flattern the top of the Halwa evenly with a flat spatula.
When cooled cut the Jackfruit Halwa into desired shapes and garnish with Cashew nuts and serve.
