Uppumanga Curry (Salted Mango in Coconut and Curd Gravy)

Uppumanga Curry is a very tasty and delicious Coconut and Curd based Salted Mango Curry goes well with Rice.The following ingredients are needed to prepare Uppumanga Curry.

Ingredients:-

Salted Mango. - 4 small
Green chillies. -4
Curd.               -1cup
Salt.              . -to taste


For grinding Coconut masala paste:-

Coconut grated. -1cup
Cumin seeds.     -1tsp
Green chilly.      -2


For Seasoning:-

Cooking oil.        -1tsp
Mustard seeds.    -1tsp
Dry Red chillies. -2
Fenugreek seeds. -1/4tsp
Curry leaves        -1spring
Green chillies.     -2
Hing powder.      -1/4tsp



Instructions:-

Wash and chop small Salted Mangoes into small pieces and keep aside

Grind grated Coconut , 2 Green chillies and Cumin seeds (Jeera) to a smooth paste and keep aside.

Wash and half slit 4 Green Chillies and keep aside.

Whisk the Curd and keep aside.



Method:-

Heat cooking oil in a pan and splutter Mustard seeds and Fenugreek (Methi) seeds and saute well.

Add broken dry Red chillies and Curry leaves and fry well .

Add half slit Green chillies and saute well and fry for a second.

Add chopped Salted Mango pieces and mix well for 2 minutes in low flame.

Add the ground Coconut masala paste and mix well.

Add whisked Curd and little Salt and mix well and boil.

When the bubbles begins to appear add Hing powder. Mix well and switch off the flame.

A tasty and delicious Uppumanga Curry / Salted Mango Coconut Curd Curry is ready to serve with hot steamed Rice.
