Ash gourd Yellow Pumpkin Red Cowpeas in Coconut Milk Recipe.

The following ingredients are needed to prepare the Recipe.

Ingredients:-

Ash gourd.        -1cup chopped
Yellow Pumkin. -1cup chopped
Red Cowpeas.  -1cup
Green chillies.   - 5
Curry leaves.     -1spring
Coconut Milk.     -1cup
Coconut oil.        -1tbsp
Salt.                    -to taste



Instructions:-

Soak the Red Cow peas overnight and pressure cook for 2 whisles adding 1cup of water and keep aside.

Wash and half slit Green Chillies and keep aside.

Chop and remove the outer skin of the Ash gourd and it's seeds and chop into small pieces. Wash and keep aside.

Chop and remove the outer skin and inner seeds and fiber parts of the Yellow Pumpkin and chop into small pieces. Wash and keep aside.

Extract fresh Coconut milk from a grated Coconut or Dilute the Coconut Milk powder in 1cup of Water without lumps and keep aside.



Method:-

In a cooking vessel add the chopped Ash gourd pieces, chopped Pumpkin pieces, half slit Green chillies and 1cup of Water. Boil and cook the Ash gourd and Pumpkin pieces till soft.

Add the cooked Red Cowpeas and mix well .

Add required Salt and mix well with the cooked Ash gourd , Pumpkin and Cow peas.

Lower the flame and add the Coconut Milk and mix well.

Add Curry leaves and boil for a minute on low flame and switch off the flame.

Add Coconut oil over the Curry in the cooking vessel.

A very tasty Ash gourd Yellow Pumpkin Red Cowpeas Curry in Coconut Milk is ready to serve with Rice.
