Bitter Gourd Pachadi / Karathe Pachadi (Konkani Recipe)



Bitter Gourd is called Karathe in Konkani.Bitter gourd Pachadi [Karathe Pachadi] is a delicious Konkani style gravy dish which is made with Curd and Coconut masala paste adding deep fried Bitter gourd round pieces.Bitter gourd Pachadi goes well with plain Rice.

The following ingredients are needed to prepare Bitter gourd Pachadi /Karathe Pachadi.

Ingredients:-

White Bitter gourd. -1
Salt.                          -to taste
Butter Milk.              -2 cup

For grinding the Coconut Masala paste:-

Coconut grated.   -1cup
Dry Red chillies.  -5
Turmeric powder. -1/4tsp

For Seasoning:-

Cooking oil.     -1tsp
Mustard seeds. -1tsp
Urad dal.          -1tsp
Methi seeds.     - very few
Curry leaves.    -1spring

Instructions:-

1. Wash and chop the Bitter gourd into thin round pieces.Apply little Salt and keep aside for 15 minutes. Then squeeze out the salty water from the Bitter gourd pieces.

2. Deep fry the Bitter gourd round pieces till crispy and become golden brown colour on all sides.Keep aside.


3. Grind the grated Coconut, dry Red chillies and Turmeric powder to a smooth paste and keep aside.




Method:-

1.Transfer the ground Coconut Masala paste into the cooking vessel.
Add 1cup of water and required Salt and mix well.Boil for 2 minutes on low flame and switch off the flame.




2. When little cooled add Butter milk and mix with the ground coconut masala paste.



3. Heat cooking oil in a small pan for seasoning.Add Urad dal and saute well.Splutter Mustard Seeds and add Methi seeds and Curry leaves.Fry well and switch off the flame.



4. Pour the above seasoning into the masala gravy in the cooking vessel.



5. Add the deep fried Bitter gourd pieces and mix with the Pachadi in the cooking vessel.



A very tasty and delicious Konkani style Karathe Pachadi / Bitter gourd Pachadi is ready to serve with plain Rice.
