Brinjal Drumstick Masala Curry (Konkani style)


Brinjal Drumstick Masala Curry is a very tasty Konkani style coconut based gravy dish goes well with hot steamed Rice.The following ingredients are needed to prepare Konkani style Brinjal Drumstick Masala Curry.

Ingredients:-

Green long Brinjal.  - 2
Drumstick.                  -2
Salt.                         - to taste

For grinding the Coconut Masala paste:-

Coconut grated.  -1 cup
Red Chillies.        -5
Turmeric powder. -1/4 tsp
Dry mango piece. - a small piece.

For Seasoning:-

Cooking oil.      -1tsp
Urad dal.          -1tsp
Mustard seeds.-1/2tsp
Methi seeds.     -1/4tsp


Instructions:-

1. Wash, peel the outer skin and chop Drumstick into 1 and 1/2 inch lengthy pieces and keep aside.

2. Wash and chop Green Long Brinjal into1inch lengthy pieces and keep aside.

3. Grind Coconut gratings along with dry Red chillies, Turmeric powder and a small piece of dry Mango to a smooth paste adding little water and keep aside.


Method:-

1. In a cooking vessel add the chopped Green long Brinjal pieces,Drumstick pieces and 2 cup of water.Boil and cook the vegetables till soft.




2. Add required Salt and mix with the cooked Brinjal and Drumstick  pieces.Boil for 2 minutes.


3. Add the ground Coconut Masala paste and mix with the cooked Brinjal and Drumstick pieces.



   Boil and cook the Brinjal Drumstick Masala Curry for 5 minutes on low flame and switch off the flame.



4. Heat Cooking oil in a pan on low flame for seasoning.Add Urad dal and saute well.

5.When Urad dal starts to change its colour splutter Mustard seeds and saute well.

6. Add Methi seeds and fry well. Switch off the flame.
 
7. Pour the above seasoning into the Brinjal Drumstick Masala Curry in the cooking vessel.


8. A tasty and delicious konkani style Brinjal Drumstick Masala Curry is ready to serve with hot steamed Rice.
