Drumstick Sambar / Masinga Sambar adding Home made Sambar Powder (Konkani Recipe)


Drumstick is called Masinga Sange in Konkani.Masinga Sambar is a very tasty and delicious Konkani style Drumstick Sambar made by adding home made Sambar powder.

The following ingredients are needed to prepare Drumstick Sambar/ Masinga Sambar.

Ingredients:-

Drumstick        . - 4
Potato.               -1 medium size
Tomato.              -2 medium size
Hing powder.      -1tsp
Toor dal.             -3/4 cup
Sambar powder. -5tbsp (home made)
Salt.                    -to taste.



For Seasoning:-

Cooking oil.             -1tsp
Mustard seeds.        -1tsp
Cumin seeds/Jeera. -1/2tsp
Curry leaves.            -1spring



For Sambar Powder:-


Urad dal.              -2tbsp     
Coriander seeds. -4 tbsp
Turmeric powder. -1/4tsp
Dry Red Chillies.  -10
Methi seeds.        -few
Black Pepper.      -1tsp
Cumin seeds.      -1/2tsp



Instructions:-

1. Peel the outer skin of the Drumstick and chop into 1 and 1/2 inch lengthy pieces and keep aside.

2. Peel the skin and wash the Potatoes. Chop the Potatoes into 3/4 inch lengthy pieces and keep aside.

3. Wash and Pressure cook Toor dal and chopped Potatoes with 2 cup of Water for 2 whistles and keep aside.

4. Wash and chop Tomatoes and keep aside.

5. Prepare Sambar powder:-

Heat a pan and dry roast Urad dal, dry Red chillies, Coriander seeds, Methi seeds, Black Pepper and Cumin seeds. Saute well on low flame till the Urad dal change its colour and nice aroma of the roasted ingredients comes out. Switch off the flame and allow the roasted ingredients to cool.

When cooled, add Turmeric powder and mix with the roasted ingredients.Then grind all the roasted ingredients together to a fine powder.Home made Sambar Powder is ready. When cooled transfer the ground  Sambar Powder to a  clean and air tight container.

6. In a small bowl add 5tsp home made Sambar powder and 1tsp Hing powder.Mx with 1/4 cup of Water without lumps and keep aside.

Method:-

1. In a cooking vessel add the chopped Drumstick pieces and 2 cup of Water. Boil and cook the Drumstick pieces on medium low flame.

2. Add required Salt and chopped Tomatoes and saute well and boil for 5minutes.

3. Add cooked Potatoes and cooked Toor dal and mix with the cooked Drumstick pieces.

4. Add little Water to adjust the consistency of the Sambar.Boil and cook for 3 minutes.

5. Add the prepared mixture of Sambar powder and Hing powder into the cooking vessel from the bowl and mix with the cooked Drumstick, Potatoes and Toor dal.Boil and cook for 3 minutes and switch off the flame.

Heat cooking oil in a pan and splutter Mustard seeds and Cumin seeds and saute well.

Add Curry leaves and fry in oil and then switch off the flame.

Pour the above seasoning into the Sambar in the cooking vessel and mix well.



A tasty and delicious Konkani style Drumstick Sambar / Masinga Sambar adding home made Sambar powder is ready to serve with Dosa, Idli, Rice etc
