Charmurya Upkari / Puffed Rice Mixture .


Puffed Rice is called Charmuro in Konkani. Charmurya Upkari is a Kochi GSB Konkani style spicy and crispy snack made with Puffed Rice.

The following ingredients are needed to prepare Charmurya Upkari / Puffed Rice Mixture.

Ingredients:-

Puffed Rice.           - 5cup
Peanuts.                 -1/2cup
Kerala Pappad.      - 5
Green chillies.       - 4
Cumin seeds.         -1tsp
Curry leaves.         - 2spring
Turmeric powder.  -1/2tsp
Salt.                       -to taste.
Oil for Seasoning. - 3tbsp
Oil.                        - for deep frying.

Instructions:-

Chop the Kerala Pappad into long strips with a knife and again chop into 1/4 inch lengthy pieces and keep aside.

Heat oil in a pan for deep frying.Deep fry the chopped Kerala paapads in the hot oil till crisp and remove to a plate.

In the same pan add the Peanuts and deep fry till golden brown colour and transfer to a plate.

Wash the Green chillies and pat dry with a cloth and slit into half lengthwise and keep aside.

Method:-

Heat 3tbsp Oil in a wide bottom pan on medium flame and splutter Mustard seeds and saute well.

Add the slit Green chillies and fry in oil till crispy.

Add Cumin seeds and saute well.

Once the Cumin seeds splutter add Curry leaves and fry in oil till crispy.

Add Turmeric powder and Salt. Mix well.

Lower the flame and immediately add the Puffed Rice and mix well with a spatula for 5 minutes till the Puffed Rice become crispy.

Add the deep fried Peanuts and mix well and switch off the flame.

Add the deep fried Kerala Pappad and slowly mix with all the ingredients in the wide bottom pan using the spatula.

Charmurya Upkari / Puffed Rice Mixture is ready to serve as a snack.

When cooled transfer the Charmurya Upkari / Puffed Rice Mixture in an airtight container.
