Vaingana Gojju / Smoked Eggplant Mash.

Eggplant is called Vaingan in Konkani.Vaingana Gojju is a very tasty and delicious smoked Eggplant curry mashed with Green chilly, Tomato and Onion.The following ingredients are needed to prepare Vaingana Gojju / Smoked Eggplant Mash.

Ingredients:-

Eggplant (Vaingan). -1
Onion.                       -1 medium size
Tomato.                     -1 medium size
Green chillies.           -3
Red chilly powder.    -1/2tsp
Salt.                           - to taste
Oil .                            -2tsp   

                         

Instructions:-

1. Wash and chop Tomatoes and keep aside.

2. Wash and finely chop Green Chillies and keep aside.

3. Peel the Onion. Wash and finely chop the Onion and keep aside.

4. Wash the Eggplant (Vaingan) in water without removing the stem portion and pat dry it with a towel.Apply little oil over the outer surface of the Eggplant.

5. Use a steel mesh to roast the Eggplant. Keep the Eggplant on a steel mesh.Place the steel mesh on the glass burner and roast the Eggplant in a direct flame on medium low heat.

6. Hold the stem of the Eggplant on the steel mesh and rotate it over direct flame till it is roasted and cooked evenly on all sides.

7. Remove the roasted Eggplant from fire and keep it on plate to cool.


8. Once it is cooled peel and remove the burned skin completely and keep aside the pulp on a plate.

9. In a bowl add finely chopped Green chillies and little Salt and mash them together thoroughly with your fingers.


10. Add the roasted and cooked Eggplant in the bowl.Mash it finely and mix with the Green chilly Salt mixture.Keep aside.


Method:-

1. Heat Oil in a pan on low flame and add the finely chopped Onion and saute well till the Onion becomes translucent.
 Add finely chopped Tomatoes and mix well with the cooked Onion till mushy.

2. Add required Salt and mix with the cooked Onion and Tomato. 

3. Add Red chilly powder and mix again with the cooked Onion and Tomato..

4. Add the mashed Eggplant green chilly mixture into the pan and stir well.Saute well and cook for 3 minutes on low flame and switch off the flame.

 Vaingana Gojju /Smoked Eggplant Mash is ready to serve with hot steamed Rice, Chapathi, Roti, Phulkas etc.
