Ridge gourd peel is called Ghosale Sheere in Konkani.Ghosale Sheere Chutney is a Konkani style coconut based chutney made with the outer Peel /skin of the Ridge gourd.Ghosale in Konkani means Ridge gourd. A very tasty and delicious chutney goes well as a side dish with Rice, Dosa, Idli, Chapathi or Bread.
The following ingredients are needed to prepare Ghosale Sheere Chutney.
Ingredients:-
Ridge gourd peel. - of 3 Ridge gourd
Green chilly. - 4
Cumin seeds(Jeera). -1tbsp
Coconut oil. -1tbsp
Salt. -to taste
Tamarind. -a marble size
Coconut grating. -1cup
Instructions:-
Wash the Ridge gourd and chop the outer skin /peel and keep aside the Ridge gourd Peel.
The following ingredients are needed to prepare Ghosale Sheere Chutney.

Ridge gourd peel. - of 3 Ridge gourd
Green chilly. - 4
Cumin seeds(Jeera). -1tbsp
Coconut oil. -1tbsp
Salt. -to taste
Tamarind. -a marble size
Coconut grating. -1cup
Instructions:-
Wash the Ridge gourd and chop the outer skin /peel and keep aside the Ridge gourd Peel.

Chop the Ridge gourd Peels into small pieces.
Wash and chop the Green chillies and keep aside.
Soak Tamarind in 2tbsp of warm water and keep aside.
Method:-
Heat 1tbsp Coconut oil in a pan and splutter Cumin seeds and saute well on low flame.
Add the chopped Green chillies and fry it for 2 minutes.
Add the Ridge gourd Peel pieces and required Salt.Sprinkle little water and mix well. Cook for 10 minutes on low flame
Switch off the flame and keep aside the cooked Ridge gourd peel & Green chilly mixture to cool.
In a mixer grinder add the grated Coconut, cooked Ridge gourd Peel & Green chilly mixture and soaked Tamarind to a coarse paste without adding water.
A tasty and delicious Ridge gourd Peel Chutney is ready to serve with Rice, Dosa, Idli, Chapathi or Bread.
