Karathe Phodi (Bitter Gourd Fritters)

Bitter gourd is called Karathe in Konkani.The following ingredients are needed to prepare Karathe Phodi / Bitter gourd Fritters.

Ingredients:-

Bitter gourd.           -2 medium size
Rice Flour.              -3tsp
Red Chilly powder. -1tsp
Hing powder.          -1/2tsp
Salt.                        -to taste


Instructions:-

Wash and cut the Bitter gourd into slightly thick round pieces.

Apply Salt and keep aside the Bitter gourd pieces for 15 minutes.

Squeeze out the water from the Bitter gourd and keep them in a bowl.

Sprinkle Red chilly powder and Hing powder. Mix well with the Bitter gourd pieces and keep it aside for 10 minutes.

In a mixing bowl add Rice flour.

Coat each piece of Bitter gourd into the Rice flour evenly and all over.

Dust the excess Rice flour and keep them on a plate.


Method:-

Heat oil in a deep frying pan on medium flame.

Drop the Bitter gourd pieces into the hot oil one by one for deep frying .

Flip and turn in between until the Bitter gourd pieces become crisp on all sides.

Remove the deep fried Bitter gourd pieces from the hot oil and transfer to a plate.

A tasty and crispy Karathe Phodi ( Bitter gourd Fritters) is ready to serve with Rice and Dal Curry.
