Elephant Yam is called Surnu in Konkani. Surna Upkari is a very tasty and delicious Yam stir fry goes well as a side dish with Rice.
The following ingredients are needed to prepare Surna Upkari.
Ingredients:-
Yam (Surnu). -250 gm
Chilly powder. -3/4tsp
Hing Powder. -1tsp
Mustard seeds. - 1/2 tsp
Cooking oil. -2tsp
Instructions:-
Remove the outer skin of the Yam. Chop into very small pieces. Wash well and keep aside.
Method:-
Heat oil in a pan and splutter Mustard seeds and saute well on low flame.
Add Chilly powder and stir well.
Add Hing powder and stir well.
Add the chopped Yam pieces and 1cup of water and stir well.
Cover the pan with a lid and cook on low flame until the Yam pieces become soft. Stir in between.
Once it is cooked increase the flame and saute well till the water is completely absorbed by the Yam pieces. Switch off the flame.
