Ragi Puttu / Finger Millet Puttu


Finger Millet is known as Ragi. Ragi Puttu / Finger Millet Puttu is a steamed cake made from a mixture of Ragi flour, Rice flour and Coconut gratings. Ragi Puttu is steamed in a cylindrical shape Puttu maker (Puttu mould). Now a days different shapes of Puttu maker (Puttu mould) is available in Indian stores.Ragi Puttu is a healthy and delicious breakfast goes well with Kerala Kadala Curry.

The following ingredients are needed to prepare Ragi Puttu / Finger Millet Puttu.

Ingredients:-

Ragi/ Finger Millet. -1cup
Rice flour.                -1cup
Coconut grating.      -1cup
Water.                       -1/2 cup or as required.
Salt.                          -1/2 tsp

Instructions:-

1. In a large mixing bowl add Ragi flour and Rice flour.

2. Add Salt and 1tbsp grated Coconut and mix with the flours in the mxing bowl.

3. Sprinkle Water little by little in the mixing bowl and slowly mix both the flours with your hands.Do not add all the water at once.The Puttu mixture should be like a bread crumb consistency and not a form of dough.(If the mixture is dry, sprinkle little water and mix well.) Break all the tiny lumps of the flour mixture with your hands.

4. To check the right consistency of the Ragi Puttu mixture, take the prepared flour mixture in your fist and gently close it.It will hold together to form a shape and when you press the shape, it will crumble down. The Puttu flour mixture should be crumbly and moist.Keep the Puttu mixture to rest for 5 minutes.

Method:-

1. Take a cylindrical Puttu maker (Puttu mould) .

2. Open the lid of the Puttu maker and put the perforated disc with holes inside the Puttu maker.

3. Add 2tsp Coconut grating inside the Puttu maker and close the holes of the perforated disc.

4. Then add prepared Ragi Puttu mixture little by little inside the Puttu maker and fill the Puttu maker upto half inch below the brim.

5. Then add 1tbsp Coconut grating on the top of the Ragi Puttu mixture and close the Puttu maker with its lid.Keep aside.

6. Add required Water (about 8 cups) in a Pressure cooker and close the Pressure cooker with the lid without putting weight and boil on high flame.

7. When the steam starts comming, keep the Puttu maker filled with Ragi Puttu mixture on the top of the cooker lid where we put the cooker weight.Then steam starts to come through the holes of the Puttu maker lid.Steam cook the Ragi Puttu on high flame for 6 minutes.

8. Switch of the flame and remove the Puttu maker from the pressure cooker lid.

9. Hold the Puttu maker parallel to the serving plate. Open the lid of the Puttu maker and gently push it's bottom disc with a round laddle stick.The steamed Ragi Puttu slides on to the serving plate.

10. Serve the Ragi Puttu hot with Kerala Kadala Curry or  along with small ripe Banana and Kerala Pappadam  and enjoy the tasty and healthy breakfast.
