Ash gourd Pumpkin Potato Coconut Curry is a delicious side dish made with ash gourd, pumpkin and potato cooked in ground coconut paste and goes well with Rice.
The following ingredients are needed to prepare the recipe.
Ingredients:-
Ash gourd. -1cup chopped
Pumpkin. -1cup chopped
Potato. -2 medium size
Green chillies. -3
Curry leaves. -2 spring
Hing powder. -1tsp
Salt. - to taste.
For grinding the Coconut Paste:-
Grated Coconut. -1 cup
Water. -2tbsp
For Seasoning:-
Coconut oil. -1tsp
Mustard seeds. -1/2tsp
Cumin seeds. -1/4tsp
Instructions:-
1. Peel the outer skin, remove the seeds and chop the Ash gourd into small pieces.Wash well and keep aside.
2. Peel the outer skin, remove the seeds and chop the Pumpkin into small pieces. Wash well and keep aside.
3. Peel the skin and chop the Potatoes into small pieces. Wash well and keep aside.
4.Wash and half slit Green chillies and keep aside.
5. Grind the grated coconut adding 2tbsp of water to a smooth paste and keep aside.

Method:-
1. In a cooking vessel add the chopped Potato and Ash gourd pieces. Add 2 cup of water. Boil and cook the pieces.Add chopped Pumpkin pieces, half slitted Green chillies and Curry leaves.
2. Boil and cook on low flame till the Ash gourd, Pumpkin and Potato pieces become Soft.
3 Add the ground Coconut paste into the cooking vessel.
4. Add required Salt and mix well.
5. Add Hing powder and mix well.
6. Boil and cook on low flame till the bubbles starts to appear and switch off the flame.
7. Heat oil in a pan and splutter Mustard seeds and add Curry leaves.Saute well and s
