Ash Gourd Toor Dal Curry


Ash gourd Toor dal Curry is a delicious side dish goes well with hot steamed Rice, Chapathi etc.

The following ingredients are needed to prepare Ash gourd Toor dal Curry.


Ingredients:-

Ash gourd.            - 3 cup chopped
Toor dal.                -1/2cup
Turmeric powder.  -1/4tsp
Red chilly powder. -1/2tsp
Green chillies.        - 3



For grinding:-

Grated Coconut. -1cup
Shallots.              - 4
Cumin seeds.      -1/2 tsp



For Seasoning:-

Coconut oil.          - 2 tsp
Mustard seeds.     -1 tsp
Fenugreek seeds. -1/4 tsp
Dry Red chillies.    - 2  broken into halves



Instructions:-

Peel and wash Shallots and keep aside.

Peel the outer skin and chop the Ash gourd into small pieces and keep aside.

Pressure cook Toor dal along with Turmeric powder, Red chilly powder, Green chillies, chopped Ash gourd pieces and 3 cup of water for 2 whistles and keep aside.

Grind grated Coconut, Cumin seeds and shallots to a smooth paste adding very little water and keep aside.



Method:-

In a cooking vessel add the cooked Toor dal Ash gourd mixture. Boil and cook for 2 minutes until the Ash gourd and Toor dal becomes soft.

Add required Salt and mix well.

Add the ground Coconut paste and mix with the cooked Ash gourd Toor dal mixture. Boil and cook till the bubble starts to appear and switch off the flame.

Heat Coconut oil in a pan for seasoning and splutter Mustard seeds and Fenugreek seeds and saute well.

Add the broken dry Red chillies and Curry leaves and fry for a second and switch off the flame.

Add the above seasoning into the Curry in the cooking vessel.

A tasty Ash gourd Toor dal Curry is ready to serve as a side dish with Rice, Chapathi etc.
