ACHARI BAINGAN


Achari Baingan is a delicious pickled brinjal curry made with brinjal and onion, flavored with spices used in Indian pickle. A very tasty and delicious achari baingan goes well with phulkas, rice and dal.

The following ingredients are needed to prepare Achari Baingan.

Ingredients:-

Purple Brinjal.      - 4 (tender).
Onion.                   - 2 medium size
Cumin seeds.        -1tsp
Fennel seeds.        -1tbsp
Fenugreek seeds.   -1tsp
Mustard seeds.       - 2tsp
Kalonji seeds.        -1tsp 
Amchur powder.    - 2tsp
Red chilly powder. -1tsp
Coriander powder.  - 2tbsp
Turmeric powder.   -1/4tsp
Cooking oil.            - 3tbsp
Salt. - to taste


Ingredients:-

Wash and chop the Brinjal into four lengthy pieces along with the stem.

Peel and chop Onion and keep aside.

Heat a pan on low flame and dry roast Cumin seeds, Fennel seeds, Fenugreek seeds, Mustatd seeds and Kalonji seeds. Grind the above roasted ingredients to a coarse powder. Keep aside the achari masala powder.

Method:-

Heat oil in a wide bottom pan and add the chopped Onion, little Salt and saute well till the Onion pieces become translucent.

Add chopped Brinjal pieces, Turmeric powder, required Salt and saute well.

Add little water and mix well. Cover the pan and cook the Brinjal pieces till soft on low flame.

Add Red chilly powder, Coriander powder and saute well.

Add the coarsely ground achari masala powder and little water.Mix well.

Add Amchur powder and saute well. Cover and cook for 3 minutes. Switch off the flame.

A tasty and delicious Achari Baingan is ready to serve along with phulkas, rice and dal.
