Cluster Beans Sambar / Mitke Sange Sambar


Cluster beans is called Mitke sang in Konkani.Cluster Beans Sambar (Mitke Sange Sambar) is a tasty Sambar made with Cluster beans,Toor dal and Shallots and goes well as a side dish with Rice, Dosa, Idli etc.

The following ingredients are needed to prepare Cluster Beans Sambar / Mitke sange Sambar.

Ingredients:-

Cluster beans.       -2 cup chopped
Toor dal.               - 3/4 cup
Turmeric powder. -1/4tsp
Tamarind.              - a marble size
Shallots.                -10
Sambar powder.    -3tbsp
Hing powder.        -1/2tsp
Salt.                       - to taste

For Seasoning:-

Cooking oil.    -1tsp
Mustard seeds.-1tsp
Cumin seeds.   -1/2tsp
Curry leaves.   -1spring

Instructions:-

Wash the Cluster beans and trim both the ends.Chop the Cluster beans into 3/4 inch lengthy pieces and keep aside.

Wash and pressure cook Toor dal along with Turmeric powder and 1cup of Water for 3 whistles and keep aside.

In a bowl soak Tamarind adding little water and squeeze the soaked Tamarind and extract  the Tamarind juice.Keep aside.

In another small bowl add Sambar powder and Hing powder. Add little water and mix well without any lumps and keep aside.

Peel and wash the shallots. Heat 1/2tsp oil in a pan and roast the Shallots on low flame till the colour changes and keep aside.

Method:-

In a cooking vessel add the chopped Cluster beans and 2cup of water. Boil and cook the Cluster beans till soft.

Add cooked Toor dal and mix with the cooked Cluster beans.

Add required Salt and Tamarind juice and mix well.

Add the roasted Shallots in the cooking vessel and boil for 2 minutes on low flame.

Add the Sambar powder and Hing powder mixture from the bowl and mix well.Boil for 2 minute on low flame and switch off the flame.

Heat oil in a pan for seasoning and splutter Mustard seeds and Cumin seeds. Saute well. Add Curry leaves and saute well.Switch off the flame.

Pour the above seasoning into the Sambar in the cooking vessel.

A tasty Cluster Beans Sambar / Mitke Sange Sambar is ready to serve hot with Rice, Dosa, Idli etc.
