Ghosale Sagle / Ridge Gourd Curry

Ridge gourd is called Ghosale in Konkani. Ghosale Sagle is a Konkani style coconut based curry made with Ridge gourd and goes well as a side dish with Rice, Roti or Chapathi.

The following ingredients are needed to prepare Ghosale Sagle / Ridge Gourd Curry.

Ingredients:-

Ridge gourd -1 lengthy
Salt.              -to taste

For grinding:-

Grated Coconut. -1cup
Red chillies.        -5
Fenugreek seeds. -1/4tsp
Coriander seeds.   -2tsp
Hing powder.         -1/2tsp
Tamarind.               - a Gooseberry size

For Seasoning:-

Cooking oil.     -2tsp
Mustard Seeds. -1 tsp
Curry leaves.     -1spring

Instructions:-

Remove the outer string (skin) of the Ridge gourd and wash well. Chop the Ridge gourd into 1 and 1/2 inch lengthy pieces and keep aside.

Heat a pan on low flame and dry roast Fenugreek seeds and Coriander seeds and keep aside. In the same pan heat little oil and roast the Red chillies and keep aside.

Grind the grated Coconut along with roasted Red chillies, Coriander seeds, Fenugreek seeds, Hing powder and Tamarind to a smooth paste adding very little water and keep aside.

Method:-

In a wide bottom pan add the chopped Ridge gourd pieces, required Salt and 2 cup of water. Cover and cook the Ridge gourd pieces for 5 minutes on low flame.

Add the ground Coconut Masala paste and mix with the cooked Ridge gourd pieces.

Cook for 2 minutes on low flame. Stir in between and switch off the flame.

Heat oil in a pan for seasoning and splutter Mustard seeds and saute well. Add Curry leaves and fry well. Switch off the flame.

Pour the above seasoning into the Ridge gourd curry in the pan.

A very tasty Ghosale Sagle / Ridge Gourd Curry is ready to serve hot with Rice, Roti or Chapathi.
