Kokum Buttermilk


Kokum is called Birinda Sol in Konkani. Kokum is a tiny fruit red in colour and become dark purple colour when it ripens. Kokum fruit is halved, sun dried and sold in the market as a dried Kokum rind. The dried Kokum rinds tastes sweet and sour and used as a souring agent in Konkani cuisine.

Kokum Buttermilk is a very tasty and excellent drink and can also be served as a side dish with hot steaming Rice.

The following ingredients are needed to prepare Kokum Buttermilk.


Ingredients:-

Kokum.                -12
Butter Milk.         -1cup fresh
Salt.                      - to taste
Coriander leaves. - few


For Grinding:-

Grated coconut. -1cup
Green chillies. - 4
Cumin seeds. -1tsp


Instructions:-

Rinse the Kokum rinds in water and keep them in a bowl. Add 1cup hot Water and soak the Kokum rinds in hot water for one hour or you can soak the Kokum rinds in boiled and cooled water overnight and keep aside.

Crush and squeeze the soaked Kokum in water with your fingers and extract the Kokum juice. Strain the extracted Kokum juice with a strainer and discard the Kokum shreds.Keep aside the extracted Kokum juice.

Grind the grated Coconut, Green chillies and Cumin seeds to a fine paste adding very little water and keep aside.

Wash and finely chop Coriander leaves and keep aside.


Method:-

In a mixing bowl add the ground fine paste of Coconut, Green chilly, Cumin seeds mixture.

Add the extracted Kokum juice in the mixing bowl and mix with the ground paste.

Add required Salt and mix with all the ingredients in the mixing bowl.

Add fresh Butter milk and mix well.Adjust Water according to the consistency you want.

Lastly add finely chopped Coriander leaves and mix well.

Kokum Buttermilk is ready to serve  as a side dish with hot steamed Rice or Kokum Buttermilk can be used as a refreshing drink.

Left over Kokum Buttermilk can be stored in the refrigerator.
