The following ingredients are needed to prepare Bilimbi Raita / Bimbla Sasam.
Ingredients:-
Bilimbi / Bimbul. - 7
Onion. - 1small
Green chillies. - 2
Curd. -1 and 1/2 cup
Jaggery grated. - 2tbsp
Salt. - to taste
Mustard seeds. -1tsp
Dry Red chilly. -1broken into halves
Curry leaves. -1spring
Coconut oil. -1tsp
Instructions:-
1. Wash the Bilimbi fruits in water and boil adding 3/4 cup of water in a vessel.Cover and cook till soft.

Instructions:-
1. Wash the Bilimbi fruits in water and boil adding 3/4 cup of water in a vessel.Cover and cook till soft.
2. Drain all the water from the boiled Bilimbi fruits and keep aside.
3. Peel and finely chop Onion and keep aside.
4. Whisk the Curd and keep aside.
5. Wash the Green chillies and slit into two halves lengthwise and again chop into half pieces and keep aside.

6. Grate the Jaggery with a kitchen knife and keep aside.
7. In a vessel add the grated Jaggery along with 1/2 cup of water and boil till the Jaggery dissolves.Filter the Jaggery water and keep aside.
Method:-
1. In a bowl add the boiled Bilimbi fruits and mash them thoroughly with your hands.
2. Add the finely chopped Onion, required Salt, chopped Green chillies and Jaggery water into the bowl. Mix well with the mashed Bilimbi fruits.
3. Add the whisked Curd into the bowl and mix with all the ingredients in the bowl.
4. Heat Coconut oil in a pan for seasoning and splutter Mustard seeds.Saute well.
5. Add broken Red chilly pieces along with Curry leaves and fry in oil. Switch off the flame.
6. Add the above seasoning into the raita in the bowl.
A very tasty Bilimbi Raita / Bimbla Sasam is ready to serve.
