Salted Mangoes in Coconut Gravy is a Konkani style coconut base spicy curry made with salted Mangoes and goes well with Rice.
The following ingredients are needed to prepare Salted Mangoes in Coconut Gravy.
Ingredients:-
Salted Mango. -4 medium size
Salt. -to taste
For Grinding the Masala paste:-
Dry Red chillies. -5
Grated Coconut. -1cup
Coriander seeds. -1 and 1/2tsp
For Seasoning:-
Coconut oil. - 1tsp
Urad dal. -1/2tsp
Mustard seeds. -1/2tsp
Dry Red chilly. -1(broken into halves)
Curry leaves. - 1spring

Grated Coconut. -1cup

For Seasoning:-
Coconut oil. - 1tsp
Urad dal. -1/2tsp
Mustard seeds. -1/2tsp
Dry Red chilly. -1(broken into halves)
Curry leaves. - 1spring
Instructions:-
Wash the Salted Mangoes and chop into very small pieces and keep aside.
In a small pan dry roast Coriander seeds and keep aside.In the same pan roast the Red chillies adding little oil and keep aside.
Grind the grated Coconut, Coriander seeds, roasted Red chillies and required Salt to a fine paste adding very little water and keep aside.
Method:-
In a cooking vessel boil the Salted Mango pieces adding 1/2 cup of water till soft.
Add the ground Masala paste and mix well. Boil and cook on low flame for 3minutes and switch off the flame.
Heat Coconut oil in a pan for seasoning. Add Urad dal and saute well.
Splutter Mustard seeds and saute well.
Add broken Red chilly halves and Curry leaves. Fry well in oil and switch off the flame.
Pour the above seasoning into the curry in the cooking vessel.
A very tasty curry, Salted Mangoes in Coconut Gravy is ready to serve as a side dish with rice.
