Vegetable Pulao also known as Veg Pulao is a spicy rice dish made with Basmati rice, vegetables like Carrot, French beans,Onion, Tomato and Indian Spices.
The following ingredients are needed to prepare Vegetable Pulao / Veg Pulao
Ingredients:-
Basmati rice. - 2cup
Carrot. - 1
French beans. - few
Onion. -1 medium size
Tomato. - 1
Pepper powder. -1tsp
Cinnamon. - 1stick
Cloves. - 4
Cardamom pods - 4
Whole Black Pepper. - 8
Turmeric powder. - 1/4tsp
Ghee. - 4tsp + 2tsp
Salt. - to taste
Water. - 3 cup
Coriander leaves. - a bunch (optional)
Instructions:-
Wash and soak 2cup Basmati Rice for 30 minutes.Then completely drain Water from the soaked Basmati rice and keep aside.
Peel, wash and finely chop Onion and keep aside.
Scrap the outer skin, wash well and finely chop Carrot and keep aside.
Trim both the ends, wash and chop French beans into small pieces and keep aside.
Wash and finely chop Tomato and keep aside.
Clean, wash and finely chop Coriander leaves and keep aside.[optional]
Method:-
Heat 4tsp Ghee in a pressure cooker. Add Cinnamon, Cloves, Cardamom pods, whole Black pepper in the cooker vessel and saute well till the aroma comes.
Add the soaked Basmati rice and saute well. Add 3cup of water and required Salt and mix well. Close the cooker vessel with lid and cook for 2 whistles.Switch off the flame and keep aside.
Heat 2tsp Ghee in a wide bottom pan and add finely chopped Onion and little Salt. Saute well till the Onion pieces become translucent.
Add finely chopped Carrot and chopped French beans.Saute well and cook on low flame till soft.
Add finely chopped Tomato and 1/4tsp Turmeric powder.Saute wel till the Tomato pieces become soft.
Add 1tsp Pepper powder and mix with all the ingredients in the wide bottom pan.
Once the vegetables are cooked well, add the Basmati rice from the cooker vessel and mix well on low flame.
Add finely chopped Coriander leaves. (Optional). Switch off the flame
A very tasty and delicious Vegetable Pulao / Veg Pulao is ready to be served hot with Onion Raita.
ONION RAITA RECIPE
Ingredients:-
Green chillies. -2
Onion. -1
Curd. -3/4 cup
Salt. - to taste.
Instructions:-
wash and chop Green chilly into thin round slices and keep aside.
Peel, wash and finely chop Onion and keep aside.
Method :-
In a bowl add finely chopped Green chilly slices and required Salt and mash well.
Add finely chopped Onion and mix well with the chopped Green chill slices.
Add Curd into the bowl and mix all ingredients togther.
A simple and tasty Onion Raita is ready to serve with Vegetable Pulao.
