Chinese Potato is called Sopoor Kook in Konkani. Sopoor Kooka Pachatti is a Konkani style deep fried chinese potato masala curry prepared using deep fried chinese potato, curd and coconut masala paste.
The following ingredients are needed to prepare Sopoor Kooka Pachatti.
Ingredients:-
Chinese Potato. -15
Grated Coconut. -1cup
Dry Red chillies. -3
Turmeric Powder. -1/4tsp
Curd. -1/2cup
Salt. -to taste
For grinding Coconut Masala Paste:-
Coconut oil. -1tsp
Mustard Seeds. -1tsp
Cumin seeds/Jeera. -1/2tsp
Curry leaves. -1spring
Instructions:-
1. Remove the outer skin and chop the Chinese Potato into thin lengthy pieces.Apply little Salt and keep aside for 15 minutes to marinate. Then squeeze the Chinese Potato and drain the water completely.

2. Heat oil in a pan on low flame and deep fry the Chinese Potato pieces till golden colour and it becomes crisp. Keep aside

3. Grind the grated Coconut, dry Red chillies and Turmeric powder to a fine paste adding little water and keep aside the Coconut masala paste.
4. Whisk or beat the Curd with a wire whisk and keep aside.

Method:-
1. In a cooking vessel add the ground coconut masala paste, 1cup of water and required Salt and mix well. Boil and cook for 3 minutes and switch off the flame.
2. Once it is cooled add the whisked Curd and mix well
3. Heat oil in a pan for seasoning on low flame and splutter Mustard seeds and Cumin seeds. Saute well. Add Curry leaves and fry for a second. Switch off the flame.
4. Pour the above seasoning into the Curry in the vessel.
5. Add the deep fried Chinese Potato pieces into curry in the vessel and mix well. [You can add the deep fried Chinese potato pieces into the curry just before serving.]
6. Transfer the Sopoor Kooka Pachatti to a serving bowl.
A tasty and delicious Sopoor Kooka Pachatti / Deep Fried Chinese Potato Masala curry is ready to serve with Rice.
