Sopur Kooka Adgai (Chinese Potato Pickle)


Chinese Potato is called Sopur Kook in Konkani.Sopur Kooka Adgai is a tasty and delicious pickle made with Chinese potatoes.

The following ingredients are needed to prepare Sopur Kooka Adgai / Chinese Potato Pickle.

Ingredients:-

Chinese Potato.    -12 or 15
Salt .                     - to taste.
Dry Red chillies.  -5
Tamarind.             - a marble size
Mustard seeds.     -1/2tsp
Methi seeds.         - 10 seeds
Hing powder.        -1tsp
Oil.                        - for deep frying.

For Seasoning:-

Coconut oil.     -1tsp
Mustard seeds. -1/2tsp
Curry leaves.    -1spring


Instructions:-

1. Peel the outer skin of the Chinese Potato. Wash thoroughly in water. Chop into 1inch lengthy pieces. Wash the chopped Chinese Potato pieces in water and drain water completely.Then apply little Salt on the chopped Chinese Potato pieces and keep aside for 10 minutes to marinate the pieces.

2. Heat little oil (1/4 tsp) in a pan and roast the dry Red chillies till crisp and keep aside. In the same pan add Mustard seeds and Methi seeds and roast for a second and keep aside. (Donot splutter the Mustard seeds).

3. Soak Tamarind in 3tbsp of boiled and cooled water and take out the Tamarind pulp.Keep aside.

Method:-

1. Squeeze the marinated Chinese Potato pieces and drain the salty water completely. Heat oil in a pan and deep fry the chopped Chinese Potato pieces till crisp and golden colour. Keep aside.

2. Grind the roasted Red chillies, Mustard seeds, Methi seeds, required Salt and Hing powder along with Tamarind pulp to a fine paste. Keep aside.

3. Heat 1tsp oil in a pan and splutter Mustard seeds and fry Curry leaves.Add the ground Red chilly Tamarind paste into the seasoning. Add 1/2 cup of water. Stir well and boil for a minute and switch off the flame.

4. Transfer the seasoned Red chilly Tamarind paste to a serving bowl.

5. Add the deep fried Chinese Potato pieces into the serving bowl.

6. A tasty, mouth watering and delicious Sopur Kooka Adgai / Chinese Potato Pickle is ready to serve with Dosa, Idli and also as a side dish with Rice.
