Rava Laddu / Rava Ladoo Recipe.


Rava Laddu or Rava Ladoo or Sooji Ladoo is a popular and easy to make sweet dish.Rava Laddu is called Lellama Undo in Konkani.Rava Laddu is made with fine Rava [Semolina], powdered Sugar Cardamom mixture, Ghee, little boiled Milk and dry Raisins. Rava Laddu recipe is given below with step by step photos.

The following ingredients are needed to prepare Rava Ladoo / Rava Laddu / Sooji Ladoo  / Lellama Undo.

Ingredients:-

Fine Rava (Semolina). -1 and 1/4 cup
Sugar.                           -1 cup
Cardamom.                   -5
Ghee.                            - 2tbsp + 1tbsp + 1/2tbsp
Boiled Milk.                 -3tbsp
Raisins.                         -20

Instructions:-

1. Peel the Cardamom. Add 1cup Sugar along with peeled Cardamom in a blender and blend it to a fine powder and keep aside.

2. Boil 1/4 cup of Milk and keep aside.

3. Keep aside the dry Raisins on a plate.

Method:-

1. Heat 2tbsp Ghee in a wide bottom Kadai.

2. Add 1 and 1/4 cup of fine Rava into the kadai and roast the Rava well in hot Ghee on low flame. Stir continuously till the roasted Rava becomes fragrant and starts to slightly change its colour.

3. Add Sugar Cardamom powder mixture into the kadai and mix well with the roasted Rava.Stir well.

4. Add 1tbsp of Ghee into the kadai and mix well with the mixture.Stir the mixture continuously.

5. Add dry Raisins and mix with the Rava Sugar Cardamom powder mixture.Keep on stirring the mixture on low flame for 2 minutes. Switch off the flame.

6. Sprinkle 2tbsp boiled Milk and 1/2tbsp Ghee into the Rava Sugar mixture and combine everything well.

7. Start binding the Ladoos immediately before the mixture cools down.Apply little Ghee on your palm while binding the Rava Ladoos.Take a small portion of the hot Rava Sugar mixture and press down tightly in your fist and give a round shape and make Rava Ladoo.Garnish each Rava Ladoo with dry Raisins while binding.

8. Similarly make small bite sized Rava Ladoos from rest of the mixture before the mixture cools down. Sprinkle 1or 2tbsp boiled milk on the mixture if it is difficult to bind the Ladoo.Keep the prepared round shaped Rava Ladoos on a plate. When cooled store the Rava ladoos in a clean and airtight container.You can keep this Rava Ladoos outside and will last for a week and they need not to be refrigerated. I got 20 small bite size Rava Ladoos from this mixture.

A sweet and delicious Rava Ladoo / Rava Laddu / Sooji Ladoo / Lellama Undo is ready to be popped into your mouth.
