Raw Mango is called jeevo Ambo and Potato is called Kook in Konkani. Jeevo Ambo & Kook Humman is a Konkani style hot and spicy Raw Mango Potato Curry. A delicious and spicy curry that can be served as a side dish for rice, dosa, idli etc.
The following ingredients are needed to prepare Jeevo Ambo & Kook Humman / Hot and Spicy Raw Mango Potato Curry
Ingredients:-
Potato. -1medium size
Raw Mango. - a small
Green chilly -1
Urad dal. -1/2 tsp
Mustard seeds. -1/2 tsp
Methi seeds. -8 seeds only
Curry leaves. -1 spring
Red chilly powder. -2 tsp
Turmeric powder. - a pinch
Hing powder. -1tsp
Coconut oil. -2tsp +1tsp
Salt. -to taste
Instructions:-
In a bowl add Red chilly powder, Turmeric powder and Hing powder. Add little water and make a Spice powder mixture and keep aside.
Peel, wash and chop Potato into thin lengthy pieces and keep aside.
Wash and half slit one Green chilly lengthwise and keep aside.
Wash, peel and chop raw Mango into thin lengthy pieces and keep aside.
Method:-
Heat 2tsp Coconut oil in a pan on low flame. Add Urad dal and saute well.Splutter Mustard seeds and Methi seeds and saute well.Add half slit one Green chilly and add Curry leaves and fry well.
Add chopped Potato pieces into the pan and saute well.
Lower the flame and add the Spice powder mixture and mix well.
Add 1/4 cup of water and required Salt. Cover the pan with a lid. Boil and cook the Potato pieces till soft on low flame.
Add chopped raw Mango pieces into the pan and mix well.
Cover and cook again for 3 minutes on low flame. When Potato and raw Mango pieces are cooked well, switch off the flame.
Pour 1tsp Coconut oil over the hot and spicy Raw Mango Potato Curry and mix well.
A very tasty Jeevo Ambo & Kook Humman / Hot and spicy Raw Mango Potato Curry is ready to serve as a side dish for Rice, Idli, Dosa etc.
