Kuvale Tomato Pulichikeri is a coconut and curd base Konkani style Ash gourd Tomato Pulissery. A delicious gravy dish goes well with rice.
The following ingredients are needed to prepare Kuvale Tomato Pulichikeri.
Ingredients:-
Ash gourd. - a small piece
Tomato. - 3
Green chilly. -1
Curd. -1cup
Salt. -to taste
For grinding the Coconut masala paste:-
Grated Coconut. -1cup
Dry Red chillies. -5
Turmeric powder. -1/4tsp
For Seasoning:-
Coconut oil. -1tsp
Mustard seeds. -1tsp
Cumin seeds. -1/2 tsp
Curry leaves. -1spring
Instructions:-
Remove the outer skin and the seeds of Ash gourd. Wash well and chop into 1 inch lengthy pieces and keep aside.
Wash and roughly chop Tomatoes and keep aside.
Grind grated coconut along with dry Red chillies and Turmeric powder to a smooth paste adding very little water. Keep aside the ground Coconut Masala paste.
Whisk the Curd adding little water and keep aside.
Wash and half slit Green chilly lengthwise and keep aside.
Method:-
In a cooking vessel add the chopped Ash gourd pieces, half slit Green chilly and 1cup of water. Boil and cook till Ash gourd pieces become soft.
Add roughly chopped Tomatoes and mix with the cooked Ash gourd pieces.
Add required Salt and mix well.Cook on low flame for 2 minutes.
Add the ground Coconut Masala paste and mix well. Boil for a minute.Switch off the flame and allow the gravy to cool.
When the gravy is cooled add the whisked Curd and mix well.
Heat Coconut oil in a pan for seasoning. Splutter Mustard seeds and Cumin seeds and saute well. Add Curry leaves and fry for a second and switch off the flame.
Pour the above seasoning into the Pulichikeri in the cooking vessel.
Transfer the Kuvale Tomato Pulichikeri to a serving bowl.
A tasty Kuvale Tomato Pulichikeri is ready to serve with rice.
