Spicy Long Brinjal Masala curry is a delicious side dish made with long slender brinjals. A very tasty semi thick gravy dish goes well with rice or chapathi.
The following ingredients are needed to prepare Spicy Long Brinjal Masala Curry.
Ingredients:-
Long Brinjal - 4 [green or purple]
Salt. - to taste
Red chilly powder. -1tsp
Coriander powder. -2tsp
Turmeric powder. -1/4tsp
Hing powder. -1tsp
Garam Masala powder. -1/2tsp
Urad dal. -1tsp
Mustard seeds. -1/2tsp
Coconut oil. -2tsp
Instructions:-
Wash the long Brinjals in water. Chop and remove the stems. Chop the long Brinjals lengthwise and then chop into small 1/2 inch pieces.
In a mixing bowl add the chopped Brinjal pieces.Add required Salt into the mixing bowl and mix with the chopped Brinjal pieces. Keep aside for a minute.Add Red chilly powder, Coriander powder, Turmeric powder, Hing powder and Garam Masala powder into the mixing bowl.Mix all the above spice powders with the chopped Brinjal pieces till the masala powders nicely coated with the brinjal pieces.Keep aside.

Method:-
Heat oil in a pan add add Urad dal and saute well.
Splutter Mustard seeds and Methi seeds and saute well.
Add the masala coated Brinjal pieces into the pan and mix well.
Cover the pan with a lid and cook the Brinjal pieces till soft on low flame. Saute in between.
When the gravy becomes thick switch off the flame.
Transfer the Brinjal masala curry to a serving plate.
A tasty and delicious Spicy Long Brinjal Masala Curry is ready to serve as a side dish with rice or chapathi..
